The language of Office LTSC 2024 is set by the Language line in the configuration file you install with. Change the code before you run setup and Office installs in that language. A language can also be added to an installation that's already on the PC, without reinstalling Office.
Choose the language before you install
In the configuration file from Install Office 2024 Professional Plus or Standard, change the code in this line.
For more than one language, add a line for each one inside the Product section.
There's also a MatchOS value, which follows the language of Windows. Microsoft explains that "When Match Operating System is used, the base language of the operating system and all active display languages for user profiles on the device are installed."

Microsoft's full list is in its overview of deploying languages.
English (United Kingdom) has one exception. Microsoft marks it as a language that "isn't available in Project or Visio," so a Project installation needs en-us even when Office itself is in en-gb.
Add a language to Office that's already installed
1. Open Notepad and paste the following, with the code of the language you want in place of de-de.
2. Save it in C:\ODT as addlanguage.xml, with Save as type set to All files.
3. Open Command Prompt as administrator and run these commands.
When you add to an existing installation, Microsoft notes that the tool can work out the architecture and the source of the current installation by itself, so the file doesn't need to state them.
Switch the display language
  1. Open any Office app and go to File > Options > Language.
  2. Under Office display language, select the language and choose Set as Preferred.
  3. Close every Office app and open them again.
Add proofing tools only
To check spelling and grammar in another language while keeping the menus in your own, install that language's proofing tools without the full language pack. Microsoft lists them as "spelling and grammar checkers, thesauruses, and hyphenators."
Save it as proofing.xml in C:\ODT and run setup.exe /configure proofing.xml from an administrator Command Prompt in that folder.
