Office runs natively on Apple silicon.
When your macOS version drops off the list
Under Microsoft's policy, the oldest of the three versions leaves the list each time Apple releases a new major version of macOS, so Sequoia leaves when the next version arrives. Office keeps running on it. In Microsoft's words, "your Office apps will still work, but you'll no longer receive any updates including security updates." Upgrading macOS brings the updates back.
