32-bit or 64-bit Office
Which version to install, and what to do when the wrong one is on the PC

Install 64-bit Office unless you have a specific reason not to. The reasons Microsoft gives for choosing 32-bit are narrow ones, such as a PC with less than 4 GB of memory, 32-bit COM add-ins that have no 64-bit alternative, or VBA code that uses Declare statements. 64-bit Office is also the one Microsoft requires for displays at 4K and higher resolutions.
Setting it in the configuration file
The OfficeClientEdition value on the Add line of your configuration file decides which version installs. Set it to 64 for 64-bit or 32 for 32-bit. If the value is left out, the tool installs 32-bit on a PC with less than 4 GB of memory.
In the Office Customization Tool, the same choice is the architecture setting under Products and releases.
With the Office 365 Pro Account
The apps from the Office 365 Pro Account install from Microsoft's apps page, and Microsoft's install steps put the 64-bit version on unless a 32-bit Office, Project or Visio is already on the PC. To change version later, uninstall the apps first, then choose the version under Install apps when you install again.
Every Office product on the PC has to match
Microsoft's rule for one PC is that "All installed products must match in bit (32-bit or 64-bit) version. For example, you can't install a 32-bit version of Visio on the same computer with a 64-bit version of Office." The Office Deployment Tool's reference adds that the installation fails in that case, "since mixed architectures aren't supported."
That applies to Project, Visio and the apps from the Office 365 Pro Account too. Install them with the same architecture as the Office already on the PC, as Project won't install alongside Office and Visio won't install alongside Office explain.
Check which version you have
Open Word and go to File > Account > About Word. The first line of the window ends in 32-bit or 64-bit.
Changing from one to the other
Office can't switch between 32-bit and 64-bit in place. Uninstall Office in Settings > Apps > Installed apps, restart the PC, change the OfficeClientEdition value in your configuration file and run the configure command again.
The new installation activates with your key again, and each activation counts towards the key's activation limit. Settle on the version before the first installation wherever you can.
Microsoft's page Choose between the 64-bit or 32-bit version of Office goes through the reasons in more detail.
